Core responsibilities

• Prepare a variety of sushi items, including rolls, sashimi, nigiri, and specialty menu offerings with precision and consistency.
• Maintain high standards for food quality, presentation, sanitation, and safety at all times.
• Set up, stock, and organize the sushi station to ensure smooth and efficient service.
• Inspect ingredients for freshness and proper quality, and communicate inventory needs as needed.
• Follow recipes, portion controls, and plating standards to ensure consistency across all menu items.
• Collaborate with kitchen leadership and front-of-house team members to support timely service and guest satisfaction.
• Maintain cleanliness of the work area, equipment, and tools in accordance with health and safety requirements.
• Contribute to a positive, professional kitchen culture and support team operations as needed.

Experience

• Previous experience preparing sushi in a restaurant or hospitality setting.
• Strong knowledge of sushi preparation techniques, knife handling, and ingredient handling.
• Ability to work efficiently in a busy environment while maintaining accuracy and attention to detail.
• Understanding of food safety, sanitation, and proper kitchen procedures.
• Reliable, organized, and able to communicate effectively with team members.
• Flexibility to work evenings, weekends, and holidays based on business needs.

Preferred Qualifications

• Experience with premium or high-volume sushi service.
• Familiarity with a wide range of fish, seafood, and specialty ingredients.
• Ability to contribute menu ideas or support creative specials.
• ServSafe or similar food safety certification is a plus.
